Happy Saturday, okay so since I mentioned giving you all my favorite cheesecake recipe, I figured I would just type up a blog post on it! This cheesecake is the absolute best cheesecake, don’t take any shortcuts and I promise you it will come out amazing every time! I would plan ahead when you make this cheesecake. It is its best two days later. What I usually do is make it two days ahead of time and let it sit in the fridge and ripen. If you can’t wait the full two days.. you can go ahead and do one day. We have given in a couple of times when making the cheesecake and ate it the following day. Second day will be the best. Before you start make sure your filling ingredients are ROOM TEMP!
Ingredients
- Strawberry Glaze
- Fresh strawberries
- butter
- 9″ spring form pan
- parchment paper
- 1 1/2lb cream cheese (room temp)
- 1lb sour cream (room temp)
- 1 1/3c sugar
- 5 eggs (room temp)
- 1/4 c flour
- 2t vanilla extract
- 2t lemon juice
- cinnamon
- cookie graham crust
Steps:
- Preheat oven to 325 degrees
- line parchment paper on bottom and sides of spring form pan
- melt one stick of butter
- Start off with half of the package of cookie grahams, pour into the bowl and mix about a teaspoon of cinnamon with it. You could always add more if you like, I like to start off with a little at a time.
- mix your melted butter with your cookie crumbs. you want this mixture wet but not to where it falls apart. If you need to add more cookie crumbs to the mixture you can.
- you are going to press this cookie mixture into the bottom of your spring form pan. Bottom & sides. Here is a photo for reference
- You want to place your crust in the freezer while you make the filling.
- Start off with mixing the cream cheese
- Mix in the sugar with cream cheese (a little at a time)
- Mix in one egg at a time
- You can mix the rest of your ingredients after this, flour, lemon juice, vanilla extract
- add sour cream
- pour into your spring form pan
- leave in your 325 degrees oven for an hour and fifteen minutes
- When time is up let it cool inside your over with door open for an hour.
- after an hour you can take out and cover it. Make sure you let it cool completely before placing it in the fridge.
- before eating you can add your glaze and strawberries.
Here is my all time favorite recipe. I have also tried a pecan topping, which turns out delicious too! I will have to get the recipe for that!
